Cork is harvested from the cork oak tree (Quercus suber<\/em>), which thrives primarily in the Mediterranean region, particularly in Portugal\u2014the global leader in cork production. The harvesting process is unique in that the tree is never cut down; instead, the bark is carefully stripped every nine years. This allows the tree to regenerate its bark, contributing to the environment by continuing to sequester carbon dioxide throughout its long life – often spanning over two centuries.

Sparkling wines, particularly champagne, also benefit from cork\u2019s elastic memory, which ensures a tight seal under pressure. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

    \u201eIn a recent study we carried out with Champagne, we found that tirage (the second fermentation) using cork rather than an aluminium stopper provides a lot of advantages, a range of scents and, most importantly, a better taste to the wine.
