The Bauer Winery, founded in 2012 by the German oenologist Oliver Bauer and his wife, Raluca, is located in the Drăgășani Vineyard and is based on a winemaking philosophy that emphasizes authenticity and minimal technological interventions. Oliver Bauer, known for his contributions to Prince Stirbey since 2003, chose to develop a small family business managing nine hectares of vineyards. The winery uses modern technology adapted to produce limited batches of carefully selected grapes from old plots. The winery’s portfolio includes Romanian varieties, such as Crâmpoșie Seleccionata, Fetească Neagră, and Negru de Drăgășani, as well as international varieties, such as Petit Verdot. The wines stand out for the natural expression of the grapes. Among the most appreciated are Sauvignon Blanc, Rosé from Negru de Drăgășani, and Orange Wine. An example of this distinct approach is the orange wine obtained from Sauvignonasse from a 40-year-old vineyard, which perfectly represents the winery’s "Natural Creativity" philosophy.
