Saptalization

(winemaking) – the enrichment of grape must by adding sugar (from sugar beet or sugar cane) to increase its alcoholic potential. It got its name from Comte Chaptal, one of Napoleon Bonaparte’s ministers, who advocated the practice. Today, saptalization is strictly forbidden for wines that must be traceable.
